Gulai Kepala Ikan Tongkol Piaman/ Fish Head (Euthynnus affinis) curry

Gulai Kapalo Ikan

Menu ini untuk 2 orang. 

Bahan:
- 1 ekor kepala ikan (belah dua)
- 2 buah kentang (potong2 sesuai selera)
- 2 lembar daun jeruk
- 2 lembar daun salam
- 65 ml santan (saya pakai santan kara)
- 250 ml air
- 1 sdt garam 
- 1 sdt rayco (opsional jika suka pakai penyedap)

Bumbu halus:
- 8 cabe rawit (jika suka pedas)
- 5 cm lengkuas
- 3 cm Jahe
- 2 cm kunyit
- 4 siung bawang merah
- 2 siung bawang putih

Bahan yang digeprek:
- 1 btng serai

Cara membuat:
1. Tumis bumbu halus, serai, daun jeruk dan daun salam sehingga warnanya berubah kecoklatan atau tercium aroma.
2. Masukkan kentang kedalam bumbu yg telah ditumis. Aduk aduk kurang lebih 1 menit sampai tercampur rata.
3. Tambahkan 250 ml air , aduk kembali.
4. Masukan kelapa ikan dan sayur pucuk ubi kedalam wajan tersebut.
5. Aduk aduk kurang lebih 1 menit. Jika air sudah kelihatan mau mendidih.
6. Tambahkan 65 ml santan. Aduk aduk kembali. (*Aduk aduk jangan kuat atau ditekan nanti kepala ikannya bisa hancur)
7. Setelah santan mendidih, lihat apakah ikan kentang sdh matang. Jika telah matang, api kompor bisa dimatikan.
8. Gulai Kapalo ikan. Siap disajikan

Fish Head Curry


This menu is for two people.

Material:

- one fish head (split in half)

- two potatoes (cut according to taste)

- two orange leaves

- 2 bay leaves

- 65 ml coconut milk (I use coconut milk kara)

- 250 ml of water

- one teaspoon of salt

- 1 teaspoon rayco (optional if you like using a flavoring)



Ground spices:

- 8 cayenne pepper (if you like it spicy)

- 5 cm galangal

- 3 cm Ginger

- 2 cm turmeric

- 4 cloves of shallot

- 2 cloves of garlic

Material stroked:

- 1 lemongrass stick


How to make:

1. Saute ground spices, lemongrass, orange leaves and bay leaves so that the color turns brown or smells.

2. Enter the potatoes into the seasoning that has been sauteed. Stir for about 1 minute until evenly mixed.

3. Add 250 ml of water, stir again.

4. Put the coconut fish and sweet potato shoots into the pan.

5. Stir for about 1 minute. If the water seems to be boiling.

6. Add 65 ml of coconut milk. Stir again. (* Stir it, don't be strong or press it later, the fish head will break)

7. After the coconut milk boils, see if the potatoes are cooked. If cooked, the stove can be turned off.

8. Fish head curry. Ready to be served
